Harvesting
Ideally, the
cocoyam plant would like to be planted in spring and see two summers before it
will reproduce itself. When the plant is
reproducing by growing new pups, the yams that form beside the mother plant
have starch in them to provide nourishment for the new shoots. It is these tubers or yams that we enjoy as
food. These must be harvested before the
plant takes that nourishment away as it will leave only cellulose behind. The yams are then past the eating stage. Therefore, it is important to have no grass
and weeds growing around the plants as the new pups emerge, they can then be
easily observed.
The pups should
not grow past the three-leaf stage otherwise the yams have lost their eating
value. If you aren’t sure if the yam
will be good to eat, look at the inside part of the yam and if the colour is a
clean and opaque white it has enough starch left in it. If the yam looks rather translucent and has
lost that dense white colour you can discard it as the starches have already
been used up by the emerging plant.
The size of the
yams can vary greatly, and I have seen a cluster of cocoyams, growing in
someone’s yard that had never been harvested. The yams were plentiful, and they
were broken off the sides of the mother plants whilst leaving the entire plant
in the ground to produce new growth. So,
whilst it will take eighteen months for the mother plant to reach the maturity
and reproduction stage, it seems best to leave it to happily reproduce itself
many times over and then eventually the harvest will be consistently abundant.
