HYACINTH BEANS – Food Value.

 

Food value

It is the young immature pods that are picked for eating. They need to be picked while they are still flat and small.  If they feel bumpy with the growing beans inside they are already too old for eating as a green bean. The matured seeds are eaten as a split pulse in India and China.  The beans are also a favourite with the Malays and Indians as an addition to their curries.

 

The whole plant is edible as the young leaves and flowers can be added to a salad while the older leaves need to be cooked.  The matured beans can also be sprouted and lightly cooked and the tuber can also be boiled and eaten.  Poor man’s bean is a good source of protein and vitamin B.

Ruby Moon is a cultivar with purplish leaves and pods that are very attractive.  The brightly coloured flowers are very appealing to bees and butterflies.  The hyacinth bean is certainly a worthwhile vine to have in the Permaculture Garden (or outside of it).  The beans are there for the picking whenever you need them as the season lasts during the entire cooler time of the year in our subtropical climate.

There are many varieties found in PNG but there are basically two different types, one that is grown for the beans and another that is grown for the pods.  With the variety where the tuber can be eaten, the leaves, flowers, green beans and seed can also be eaten.  The seed of the lablab can always be identified by looking for the raised white ridge that runs along one side of the bean.
