FOOD VALUE
The horseradish tree is a legume that is widely grown
in the tropical and subtropical belt around the world, but it will also grow
quite successfully in warm temperate regions.
It is an attractive small tree with leaves that are almost round in
appearance and can be picked to add to salads or use in stir fries etc. The leaves are exceptionally high in protein
and calcium. The taste is comparable to that of a mild mustard taste and the
roots of the tree have been substituted for horseradish. The seeds can be fried or roasted, and the
young pods can be added to stews. The
flowers can be eaten as well. The
seedpods look like drumsticks hence the name drumstick tree. Also, a high-quality oil is extracted from
the seed and the oil in the seed has strong anti-microbial properties as well
as a propensity for clearing turbid water. This makes the horseradish tree an
indispensable food source in the Permaculture Garden.
