YAKON - Polymnia sonchifolia
Yakon or Yacon is food of the Incas. Sweet root or Ground apple are some of the names attributed to this very unusual tuber.
Most tubers consist of starch but yakon is crisp and almost as sweet as an apple. The main components are fructose and inulin, and this makes it a suitable food for diabetics. The inulin (such as is also found in Jerusalem artichoke) is a form of sugar that cannot be digested due to a lack of the right enzyme in the gut. This means that these sugars pass straight through the digestive system without affecting blood sugar levels. The food value of yakon is not significant but the inulin is deemed to promote good gut flora such as bifidus (the bacteria found naturally occurring in the lower bowel). Ruminants can however digest the inulin and therefore it also makes a good forage crop.
Cultivation
Yakon does well in most soils, as there are no special
requirements. Unless there are extended
dry periods, yakon will thrive on rainfall alone. The ground does not need to be cultivated for
tuber formation but as with everything the more soil preparation there is the
more you get in return.
From personal experience I have planted yakon extensively through the food forest garden without any soil preparation except for sheet mulching with newspapers and mulch. Rainfall was pretty average, and the crop was tremendous. Wherever the ground was too hard for the tubers to penetrate it just grew above the ground! This makes yakon an excellent pioneer for crops to follow as it breaks up hard ground for the more delicate plants. Yakon has a leggy appearance and grows 1-2 metres tall. The leaves feel velvety and soft to the touch.
