Lesson 6.9.1 JERUSALEM ARTICHOKE - HARVESTING

 

The time for digging up the tubers is when the plants have totally died down. I must admit that I do cheat a little and when a new season vegetable is almost ready it makes me want it really bad, so I bandicoot around to get a bit of a sample.

Always remember to put a small portion of tubers aside for replanting.  When you notice that the tubers are beginning to sprout in spring then it is time to plant them out.  If you tend to rely only on the regrowth of what is left behind, the size of the tubers may suffer so it is worthwhile to save some of your best tubers for replanting.  Also, don’t cut the pieces too small but rather have several eyes available for sprouting into new shoots as this will produce stronger plants.

Storage

The tubers can be left in the ground and dug up and used as they are needed but I tend to dig up the whole lot and store them in moist sawdust in styrene boxes with lids on them.  This keeps them in optimum condition and handy for the taking at any time.  It also gives me the much-needed space in the garden for a winter crop.  I must add though, that one time when harvesting the tubers, I had only some fine, dry sand on hand.  After a couple of months in storage I found that two thirds of my stored crop had disappeared into a slimy mess!  Definitely stick to sawdust- it’s been proven to work.
