AMARANTH - Amaranthus species.


Amaranth is an annual that self-seeds readily.  It is a very majestic tall plant with a colourful plume that is often burgundy red but also comes in yellow, gold, and purple colours.  The leaves have coloured veins and it is a real showpiece in the garden.  Amaranth does best in the summer months and all the leaves can be picked for eating although they need to be cooked first, with the water being discarded due to the oxalic acid content.  The very young leaves can be added to the salad bowl.


It is common practice to save some of the seed head and sprinkle it over some cleared ground in the garden and the seedlings are then plucked when they are a decent size to be steamed.  The leaves can also be stir-fried in the wok.


The food value of Amaranth is comparable to that of milk.  This is one of the few plants that is rich in lysine, an amino acid that is mostly found in animal protein.  Amaranth is also high in calcium, iron, and carotene.  It is therefore worthwhile to consider allocating a section in the garden to amaranth as once it is established it will come back by itself every season.  It self-seeds so readily that there are always some plants around to catch some seed from and spread them around for a steady supply of summer greens. Text from the roots, Elisabeth Ferkonia (Aus.)
