SWORD BEAN - Canavalia gladiata
The sword bean is a drought hardy green manure crop. It is an extremely vigorous vine that will take over anything that stands in its way. The large magenta-coloured beans are very attractive but also very toxic. The only way to safely consume them is to boil them in two changes of water, soaked overnight, drained and boiled again before it is fermented into tempeh. It is still not advisable to experiment with them until an experienced person shows a proven method. Sword bean is best grown as a cover crop and it will add much in the way of green manure.
It had been reported in one of our Permaculture meetings that a few people had consumed this bean and suffered the consequences!
